Punjabi chole bhature is a dish everyone loves, you can’t eat it and remain indifferent, no way!

This is one of the recipes I give my friends when they ask me how to make an easy chicken curry

Ingredients

For the flavored oil: – 1 Black Cardamom – 7 Black Peppercorns – 3 Green Cardamoms – 1 piece Cinnamon  – 4 Cloves – 1 Bay Leaf – 2 Tbsp Sunflower Oil

For the curry: – 1 tsp Carom Seeds Ajwain – 2 cloves fresh Garlic – 1/2 inch fresh Ginger – 2 Red Onions sliced – 1/2 tsp Turmeric – 1 tsp Red Chilli Powder – 1 Tbsp Coriander Powder

For the curry: – 1/2 Tbsp Cumin Powder – 1 Tbsp Chole Masala – 2 Tomatoes chopped – 1 tsp Dry Fenugreek Leaves – 1/2 tsp Mango Powder – 1 tin cooked Chickpeas – Fresh Coriander to garnish – Salt to taste

Oil with whole spices

Remove the whole spices

Ginger, garlic and carom seeds

Sliced red onion and salt

Indian ground spices

Add the chopped tomato

Base for Punjabi chole

Blend half curry base and water

Blend to a smooth paste

Return to the saucepan

Adjust water and simmer

Mango powder and fenugreek

Add chickpeas and simmer
