2 Leeks 1 kg Peeled Potatoes 3 tablespoon Olive Oil Salt To Taste

Heat the water on medium-high until it boils, and cook the potatoes until they are tender enough to be pierced easily with a fork.
Heat the olive oil in the same saucepan or use a large skillet, and then add the thinly sliced leeks.
Sauté the leeks until they achieve a golden brown color, making sure to stir them often to prevent them from overcooking.
After they're done, lower the heat and mix the potatoes and leeks with the caramelized ones, stirring thoroughly.
Then, take a potato masher or ricer and coarsely mash the potatoes to achieve the texture you prefer.
Check the seasoning and add more salt if necessary. If serving right away, feel free to garnish with fresh herbs or toppings.
