Easy Egg Curry Recipe

If you ever have the luxury of traveling to God’s Own Country (Kerala, South India) there are some foods you HAVE to try, and most of them will include coconut.

This egg and coconut curry recipe is easy to prepare and, as per the title, includes two extremely healthy ingredients.

Ingredients

Homemade masala: – 1 tbsp Oil – 300 g Shallots – 100 g Grated Coconut – 1 tsp Ginger – 1 tsp Garlic – ¼ tsp Turmeric – ¼ tsp Garam Masala – 1 tsp Coriander Powder – 1/2 tsp Red Chili Powder

Ingredients

Other ingredients: – 1 tbsp Oil – 100 g Shallots – Salt to taste – 15 Curry Leaves – 6 Eggs – Salt to Taste – pinch of garam masala if wanted

Stage 1

Prepare the Homemade Masala

Sauté the onion and once golden, add the coconut

Add chopped ginger and garlic and cook further

Add turmeric, coriander powder, garam masala and chili powder

Cook the spices and allow it to cool down before blending

Blend with little water

Homemade Egg Masala is Ready

Stage 2

Put the Boiled Egg Curry together in few steps

Cook onion with a pinch of salt

Brown the onions until tender

Add the Homemade Egg Masala

Add the curry leaves and mix

Add water and simmer

Add boiled eggs

Add a pinch of garam masala

Allow the eggs to simmer, on a very low flame, in the curry for about five minutes
