How to make Sambar

Sambar is a recipe I hold close to my heart, as it is probably one of my proudest culinary achievements

what to expect!

This sambar recipe is one that I now make at least twice a month; it takes me about an hour to make and tastes fantastic!

Ingredients

For the lentil base: – 150 g Toor Dal – 600 ml Water – 1 tsp Turmeric Powder – 1 tsp Sunflower Oil

Ingredients

Vegetables for the stew: – 2 Medium Tomatoes – 1 Medium Onion – 1 Large Potatoes – 90 g Green Beans – 1 Medium Carrot – 90 g Kerala Cucumber – 1.2 l Water

Ingredients

For the Tadka: – 2 Tbsp Sunflower Oil – ½ tsp Asafetida – 1 tsp Mustard Seeds – 15 Curry Leaves – 2 Dry Red Chilies Other Ingredients: – 30 g Tamarind – 50 g Sambar Masala – Salt to Taste

Stage 1

Mise en place for Sambar

Chopped vegetables for sambar

Tamarind

Soak the tamarind in water

Stage 2

Start preparing the Sambar

Washed lentils with water, sunflower oil and turmeric

Cooked toor dal

Add water and bring back to the boil

Add the chopped vegetables and allow to cook

Add the tamarind infused water

Sambar masala

Sambar masala with water

Add sambar masala to sambar

Allow the sambar masala to cook in the sambar

Stage 3

Final touch: the tadka

Warm up some sunflower oil

Add asafetida (hing)

Pop the mustard seeds

Add curry leaves and dry red chilies

Add the tadka to the sambar
