This chicken tikka sandwich recipe is quick, tasty, and easy to prepare, and before you even start, I can summarize it in very few lines.
The diced chicken is marinated in a delicious yogurt and spice mixture and then grilled to a charred perfection [while still remaining juicy!].
Fresh cilantro and green chilli chutney is used to dress the crunchy onion and tomato salad, and - if you like - some extra is spread on your bread of choice.

The yogurt is used in both the marinade and the chutney; for cooking it is always best to use full-fat natural yogurt.
- Turmeric Powder, Kashmiri Chilli Powder, Cumin Powder, Chaat Masala, and Coriander Powder: These spices are used to marinate the chicken, and very little is needed to offer the depth of flavor needed. Chaat masala is also used in the green chutney and this, being a mix of spices, may offer a different taste depending on the brand; we like to use Everest Chaat Masala the most.
- Cilantro [Fresh Coriander], and Garlic Cloves: Fresh and essential for the perfect green chutney.
- Onion, and Tomato: For the crunchy salad.
- Salt to Taste

How To Make A Chicken Tikka Sandwich?
- Chop the skinless and boneless chicken into strips.
- Prepare the chicken tikka marinade with lemon juice, ginger garlic paste, tomato puree, Kashmiri chili powder, turmeric powder, cumin powder, chaat masala, coriander powder, full-fat yogurt and salt, mix well and use it to coat the chicken.
- Allow the chicken to marinate for as long as possible before cooking it in the oven; should you prefer, this can also be cooked on a grilling pan or on the barbeque directly!


- To prepare the homemade green chutney blitz together all of the green chutney ingredients on the list except for the yogurt, of which you will add only one tablespoon.
- This will work as the 'wet ingredient' for blending, but you will need to keep the rest of the yogurt aside to mix in later, as this will allow you to achieve a nice creamy consistency for the green chutney.


- For the crunchy salad, julienne some juicy red tomatoes and onions and dress it with a spoon of the green chutney.

Ingredients

Instructions
Prepare the chicken tikka
- Preheat the oven to 350* F [180*C Fan Oven].
- On a cutting board, cut the chicken into thin pieces and put them in a large mixing bowl.
- In a small bowl, add all of the marinade ingredients and mix them well, until the color becomes uniform, then add the mix to the chicken.
- Ensure each piece of chicken is thoroughly covered with the marinade, then cover the bowl and set aside to flavor and rest for at least half an hour.
- Cook the marinated chicken breasts in the preheated oven; these will be cooked in about 20 minutes. Once thoroughly cooked, remove from the oven and set aside.
Prepare the green chutney
- In an upside-down blender, blend the cilantro [fresh coriander], garlic, chaat masala, lemon juice, green chili, salt, and one teaspoon of the yogurt. Do not put all of the yogurt in the blender, as this will make the chutney very liquid.
- Once this is blended and smooth, put in a small bowl and add the rest of the yogurt a bit at a time, mixing with a spoon. Once done, taste for salt and spiciness, adjust, and set asie.
Prepare the salad
- Prepare the salad by thinly slicing the tomatoes and the onions, then dress them with a tablespoon of the green chutney and mix well.

- To serve, fill each baguette with half the salad and half the chicken tikka sandwich filler. Add some green chutney on top to taste, and serve with your favorite sides.
